MEAT RAGÙ PASTA WITH HABANERO CHOCOLATE

Ingredients for meat ragù:
  • 500 g ground beef
  • 500 g ground pork
  • 600 g tomato puree
  • 120 g tomato paste
  • 4 tablespoons extra virgin olive oil (EVO)
  • 2 carrots
  • 2 cloves of garlic
  • 1 glass of red wine
  • 1 celery stalk
  • 1 onion
  • 1 bunch of parsley
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon of Habanero Chocolate BIO Powder - No.9
Instructions:
  1. Start by preparing the vegetables: wash and chop the celery, carrots, onion, garlic cloves, and parsley, then put them in a blender glass and roughly chop them.
  2. In a large pot, pour a generous amount of extra virgin olive oil and add the chopped vegetables. Turn on the heat and gently fry them for about 10 minutes, stirring often with a wooden spoon.
  3. Add the ground meats and increase the heat. Let the meat brown until it changes color and all the water has evaporated, about 40 minutes. Season with salt and pepper.
  4. After about 10 minutes, add all the ground meat and mix with the fried vegetables. Increase the heat and continue to stir until the meat changes color. Pour in the wine and let it evaporate.
  5. Once the wine has evaporated, add the tomato paste and puree. Mix well, adjust salt and pepper, and reduce the heat to a minimum. Cover the ragù with a lid and let it cook for at least an hour and a half, stirring occasionally.
For the pasta:
  1. In a large pot, bring water to a boil and salt it. Cook the pasta according to the cooking times indicated on the package.
  2. Drain the pasta and put it back in the pot. Add 3 or 4 ladles of meat ragù and mix well.
  3. Serve the pasta in individual plates and add the meat ragù on top according to your guests' preferences. Or transfer all the pasta to a large serving dish and distribute the meat ragù on top.
