GUACAMOLE WITH GREEN JALAPENO PEPPER

Guacamole, the famous Mexican sauce for a delicious and spicy aperitif. Guacamole is accompanied by Nachos - corn chips - or to fill tortillas - thin sheets of white corn traditionally cooked on a particular plate called 'comal' - which act as a sandwich, or Burritos - similar to Nachos but mixed with soft wheat flour, or Fajitas - soft and rolled tortillas filled with meat, peppers, onions and Guacamole sauce.
In Mexico, for the preparation of Guacamole, the Jalapeno pepper is used, which they usually use green.
Here I created the green Jalapeno pepper powder with the addition of lemon dried by us, a touch of MEXICAN flavor.

The recipe is very easy and quick, the only option is to find an avocado that is ripe and soft at the right point.

INGREDIENTS

2 ripe avocados about 500g.
35g of white onion
35g of lime juice
Coriander to taste
1 teaspoon of Jalap Lemon

METHOD

First, peel and finely chop the onion
Chop the coriander leaves
Cut the avocados in half and remove the pits
Take the pulp with a spoon and pour it into a mortar or bowl
Add the lime juice
Add the teaspoon of Jalap Lemon
Beat until you get a cream
Add the chopped onion and a piece of coriander, pound again.
Add the salt

If you serve the spicy guacamole in a bowl, it is nice to decorate it with the leftover coriander and a diced tomato.
