CAROLINA REAPER CREAM CHEESE

Ingredients:
• 200 g of robiola cheese (or fresh goat cheese)
• 1 teaspoon of honey
• A few drops of lemon juice
• A knife tip of Carolina Reaper paste (adjust the amount according to your taste and tolerance for spiciness)
• Fresh chopped chives, to taste
Procedure:
In a bowl, mix the cheese with the honey and a few drops of lemon juice. Then, add a tiny amount of Carolina Reaper paste: just a knife tip is enough to make the cream very spicy, so use it carefully.
Mix everything well until you get a smooth and uniform cream, then finish with the chopped fresh chives.
Let it rest in the fridge for at least half an hour before serving so the flavors can blend perfectly.
Serve it cold on crostini or with raw vegetables like carrots, celery, fennel, or bell peppers.
